8 Tiered Wedding Cake
My sister Kassidie was getting married and asked if I could do the cake, and of course, being the good big brother, I said yes. Now, initially she wanted a simple, 3 square tiered cake all white with minimal decorations. However, when we had our consultation to go over the "minimal decorations" aspect of the cake, she fell in love with the look of a gloriously decorated 9 tier cake with intricate scroll work. Now keep in mind I had never done scroll work or made anything over 4 tiers, and before I could even stop myself I told her and her fiance YES, but it will only be 8 tiers. Did I mention that this cake also had to travel 90 miles in the middle of winter through ice and snow to reach the wedding destination? Crazy? Absolutely!!!

Cutting the Cake
I had a brief moment of panic when I walked into the ball room because there was a massive amount of burgandy, and not so much of the burnt orange color, which were the colors my sister had said their wedding colors were. Thankfully, burnt orange cala lilies made an appearance on every table, so the colors on the cake tied in to the colors of the wedding. Unfortunately the bride and groom were too nice to eachother during the cake eating and didn't even get any cake on their lips.
Serving the Cake
Now something I just don't do is cut cake. I'm horrible at it. However, when the catering staff said they were not cutting it, our friend PJaye jumped in and said she'd do it. Guilt set in, and I decided to help her as there was a LOT of cake to be served, so she cut and I plated. Teamwork! Here we are posing with all 3 flavors of destroyed cake... Chocolate with Chocolate Ganache filling, Red Velvet with Cream Cheese filling, and Pink Champagne with Pink Champagne filling. Now I know fillings are supposed to be contrasting, but I love chocolate, and Pink Champagne cake really gets taken to a new level with a buttery pink champagne frosting between the pink champagne cake layers, all made with real pink champagne. I'm getting all bubbly thinking about the Pink Champagne cake!
Practice Tier
Having never attempted scrollwork before, I decided to practice a few days before making the actual cake. Here is my first cake with what I call "C" scrollwork, because, essentially it is just a bunch of "C"s!
