Blue Bird Baby Shower Cupcakes
These cute cupcakes were ordered for a baby shower for a mother expecting a boy. In order to give a variety I did toasted coconut cupcakes with cream cheese frosting dipped in sweetened dried shredded coconut and vanilla cupcakes, half of which were frosted in buttercream and the other half with Swiss Meringue Buttercream... or at least my quick rendition of it. I had so much leftover meringue I decided to throw in a stick of softened butter and it made a super delicious frosting!
Meringue Blue Birds
I made a ton of meringue Blue Birds to place on the coconut nests to account for breakage. I ended up using the rest as filler on the cupcake stand.

In order to add some height to the cupcakes in the back, I put them on upside down glass juice tumblers.
